Celeriac Steak + Vegan Celeriac Cream

Vegan Celeriac Cream
1 celeriac – Peeled, cut into dices.
1 Litre Oat Milk
100ml Coconut Cream
Vegan Oat Yogurt
Olive Oil

Celeriac Steak
1 Celeriac – Peeled, slice into 2 cm pieces
Lemon Juice
Olive Oil & Vegan Butter
Date Molasses


Preparing the Vegan Celeriac Cream

  1. Heat olive oil in a pan and stir-fry the celeriac dices over low to medium heat until they turn dark golden-brown.
  2. Add oat milk, coconut cream, nutmeg, and salt to the pan.
  3. Cover and cook for 30 minutes.
  4. Blend the mixture until smooth, then stir in the vegan oat yogurt.

Preparing the Celeriac Steak

  1. In a bowl, combine the celeriac pieces with date molasses, lemon juice, and salt.
  2. Arrange the celeriac slices on a tray lined with parchment paper.
  3. Cover the tray with cling film and steam in the oven for 30 minutes.
  4. To finish, sear the celeriac slices in a pan or grill.
