J’s Classic Shak
It's easy, it's fuss-free and it's a downright delicious. J's Shak is the ultimate crowdpleaser, perfect for breakfast, brunch or even dinner.

Ingredients
3tbsp. Olive Oil
1 Large Onion, roughly chopped
2 Red Peppers, seeds removed and sliced into medium strips
3 Cloves of Garlic, chopped
2x400g Tins chopped tomatoes
1 Red Chilli, seeds removed and sliced
Salt & Pepper, to taste
6 Eggs
a Handful of Flat leaf Parsley, chopped
a Handful of Crumbled Feta
Method
- In a large frying pan (which has a lid), heat up the olive oil. Cook the onions and peppers, until soft (for about 20mins on a medium heat). Then, add the garlic and the chilli and cook for a further 5 mins.
- Next, add the tins of tomatoes and cook for a further 30 mins, until the sauce begins to thicken.
- Onto the eggs. Make 6 wells, with the back of a spoon and crack an egg into each.
- Put the lid on and cook gently, until the whites are set and the yolks are cooked to how you like them.
- To serve, scatter with parsley, crumbled feta and some crusty sourdough or fresh pita bread (if you have any).
