J’s Classic Shak

It's easy, it's fuss-free and it's a downright delicious. J's Shak is the ultimate crowdpleaser, perfect for breakfast, brunch or even dinner.

Ingredients

3tbsp. Olive Oil
1 Large Onion, roughly chopped
2 Red Peppers, seeds removed and sliced into medium strips
3 Cloves of Garlic, chopped
2x400g Tins chopped tomatoes
1 Red Chilli, seeds removed and sliced
Salt & Pepper, to taste
6 Eggs
a Handful of Flat leaf Parsley, chopped
a Handful of Crumbled Feta

Method

  1. In a large frying pan (which has a lid), heat up the olive oil. Cook the onions and peppers, until soft (for about 20mins on a medium heat). Then, add the garlic and the chilli and cook for a further 5 mins.
  2. Next, add the tins of tomatoes and cook for a further 30 mins, until the sauce begins to thicken.
  3. Onto the eggs. Make 6 wells, with the back of a spoon and crack an egg into each.
  4. Put the lid on and cook gently, until the whites are set and the yolks are cooked to how you like them.
  5. To serve, scatter with parsley, crumbled feta and some crusty sourdough or fresh pita bread (if you have any).
