Feta Caesar Salad

Our J’s Feta Caesar is a game-changer—think crispy pitta chips, punchy pickled red onion, and a serious green upgrade with broccoli, kale, and avolo. A Caesar, but done the Farmer J way. Here is the recipe, you’re welcome.

Ingredients

Salad Ingredients:

75g, (approx. 3 cups) chopped kale
25g, (approx. 1 cup) chopped cavolo nero
75g, (approx. 3 cups) chopped romaine lettuce
100g, (approx. 2 cups) chopped raw broccoli
1 red onion, thinly sliced and pickled (see in our Chickpea & Pickles salad recipe how to pickle)
75g, crumbled pitta chips (we recommend Soffle’s)
Feta, as much as desired (for garnish)

Homemade Caesar Dressing Ingredients:

200g, (approx. 1 cup) olive oil
40g, (approx. 3 tbsp) lemon juice
30g, (approx. ¼ cup) grated Parmesan cheese
20g, (approx. 1½ tbsp) mayonnaise
14g, (approx. 1 tbsp) mustard
1 clove garlic, crushed
7g, (approx. 1¼ tsp) salt
1g, (approx. ¼ tsp) black pepper

Method

Make the Caesar Dressing:

  1. In a medium bowl, whisk together the olive oil, lemon juice, grated Parmesan, mayonnaise, mustard, crushed garlic, salt, and black pepper until smooth and well combined.
  2. For a creamier consistency, blend the dressing in a food processor or with an immersion blender.
  3. Taste and adjust seasoning if needed.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to develop.

Prepare the Salad Ingredients:

  1. Rinse and thoroughly dry the kale, cavolo nero, and romaine lettuce.
  2. Chop them into bite-sized pieces and place them in a large salad bowl.
  3. Chop the broccoli into small florets and add them to the bowl.
  4. Crumble the pitta chips and set them aside for a crunchy topping.

Assemble the Salad:

  1. Add the pickled onion and crumbled pitta chips to the bowl with the greens.
  2. Drizzle the chilled Caesar dressing evenly over the salad.
  3. Toss gently to ensure all the ingredients are well coated.

Garnish and Serve:

  1. Sprinkle as much crumbled feta as desired over the top for extra creaminess and flavor.
  2. Serve the salad chilled in a large serving bowl or portion it onto individual plates.
