Green Dukkah Slaw

Dukkah, the crunchy Egyptian sidekick, is a mix of roasted nuts, seeds and spices. It’s perfect for dipping, coating or sprinkling. We use it on our Autumn slaw with shredded hispi cabbage and broccoli. Not just those florets might I add, at Farmer J we don’t like to waste, so use the entire stem! Enjoy.

Ingredients

250g Shredded Hispi Cabbage
100g Chopped Broccoli Stem
200g Raw Broccoli Florets Sliced
2 Tbsp. Pickled Onion
1 Tbsp. Chopped Pickled Green Chilli
2 Tbsp. Chopped Pickled Cucumber
2 Tbsp. Dukkah
1 Tbsp. Chopped Parsley
½  Cup Lemon & Olive Oil Dressing

Garnish:
1 Tbsp. Dukkah
1 Tbsp. Chopped Parsley

Lemon & Olive Oil Dressing:
½  Cup Olive Oil
¼  Cup Fresh Lemon Juice
Pinch of Sea Salt
A jar to shake it!

Method

Preparing the Dressing

  1. Pour all the ingredients into a jar and shake it until it emulsifies.

Preparing the Salad

  1. Add all the ingredients into a mixing bowl, add the dressing and mix well.
  2. Place on a serving plate, sprinkle Dukkah & parsley on top.

The salad can be prepared up to 2 hours before serving.
