Heirloom Tomato Salad
A scrumptiously sweet tomato salad

ingredients
70g Cavolo Nero
200g Sliced Mixed Tomatoes
110g Diced Cucumber
1 Diced Green Bell Pepper
1 Long Red Pimenton
100g Butterbeans
120g Roasted Cherry Tomatoes
1 Tbsp. of Fresh Oregano
½ Sliced Green Chilli
Salt & Pepper to Taste
Mustard Grain Dressing:
1/3 Cup Olive Oil
1 Tbsp. Honey
3 Tbsp. Grain Mustard
¼ Cup White Vinegar
Salt & Pepper to Taste
Method
- First, prepare the grain mustard dressing. whisk together the white vinegar, honey, grain mustard, salt & pepper together and whisk until smooth
- Add olive oil slowly and whisk together
- Next, put the cherry tomatoes on a tray, sprinkle a little olive oil and salt then roast for 15 mins
- While cherry tomatoes are roasting, put the rest of your veggies in a bowl.
- Once your cherry tomatoes are done, add to the bowl and mix.
- Top it off with the oregano and grain mustard dressing.
- Mix thoroughly once more and enjoy!
