EGG SALAD WITH SMOKY PAPRIKA AIOLI

Ingredients
FOR THE AIOLI
2 raw egg yolks or 40g egg yolk
1 garlic clove
35g or 1 spoon dijon mustard
2 drops tabasco
100ml pomace oil
15g white wine vinegar
Salt
½ tbs sweet paprika
½ tbs smoked sweet paprika
FOR THE EGG SALAD
6 hard-boiled eggs
3 spoons of smoky paprika aioli
Chopped dill
Chopped chives
Salt and pepper
Method
FOR THE AIOLI
With an immersion hand blender, mix the egg yolks and mustard, vinegar, garlic and paprika
Add the oil slowly to create emulsion, season with salt and tabasco
FOR THE EGG SALAD
Grate the eggs using a fine grater
Mix all the ingredients, season with black pepper to taste
