Shroom Shawarma
Meaty mushrooms coated in shawarma spice - veganuary doesn't have to be forkin' boring!

ingredients
500g Mixed Mushrooms (our suggestion – Oyster, King Oyster, Shitaki & Portobello, but any variety can work)
1.5tbsp. Ground Shawarma Spice Blend (found in most supermarkets)
3tbsp. Olive Oil
Sea Salt (to taste)
1 tbsp. Chopped Parsley
Lemon Wedge, to serve
Method
- Grab a medium sized frying pan, heat up the olive oil until it is piping hot, almost smoking.
- Chuck mushrooms in the pan, add the spice blend and toss around until all are coated. Add a decent pinch of salt and fry for 10-15 minutes
- Serve on a platter, scatter parsley and serve with a wedge of lemon
